“Do you have any new squash recipes that are easy to prepare?” Johanna asked in a recent e-mail.



There are lots of easy outlets for squash. Slice it into discs and sauté it in a few tablespoons of butter — that’s less than 40 calories a pat, believe it or not — or olive oil with a clove of smashed, then finely minced garlic, plus a little kosher salt and black pepper. Cook it over medium-high heat for about 10 minutes with a handful of fresh basil or leaves from stripped thyme sprigs, a chopped, seeded tomato or a few tablespoons of prepared barbecue sauce.
